Background

A commercial kitchen in Brazil was looking for a way to improve its daily cleaning process without replacing its existing sanitation system.

The facility already had:

Rather than introducing a completely new process, the objective was to improve the existing cleaning workflow by integrating ozonated water.

Challenge

The customer wanted to:

✔ Improve daily hygiene.

✔ Support odor control.

✔ Enhance surface cleaning.

✔ Keep the existing detergent system.

✔ Avoid changing operators’ daily procedures.

The biggest challenge was not selecting a new cleaning chemical.

The challenge was integrating a new technology into an existing cleaning system with minimal operational changes.

Existing Process

The customer’s current workflow is shown below.

Tap Water

Ozone Water Generator

Carbon Filter

Chemical Dilution Unit

Detergent Mixing

Cleaning Hose

Industrial Kitchen Cleaning

In this application:

  1. Tap water enters the ozone generator.
  2. Ozone is dissolved into the water.
  3. Ozonated water passes through a carbon filter.
  4. Water enters the existing dilution system.
  5. Detergent is mixed automatically.
  6. The final cleaning solution is delivered through the existing cleaning hose.

No modifications are required to the operators’ normal cleaning routine.

Proposed Solution

Instead of replacing chemicals,

the customer chose to upgrade the water.

The ozone generator becomes an additional module inside the existing cleaning process.

Advantages include:

The objective is to improve the overall cleaning process rather than replace it.

Current Status

Pilot Preparation

The equipment has been shipped to Brazil.

Installation and field evaluation are currently being prepared.

Future validation will include:

This Application Story will be updated as the project progresses.

Key Insight

This project revealed an important lesson.

Industrial kitchens are generally not looking to replace their cleaning systems.

They are looking for practical ways to improve systems they already trust.

Ozonated water is therefore better positioned as:

An upgrade to an existing hygiene process

rather than

A replacement for existing chemicals.

Understanding this difference may significantly improve how ozone water technology is introduced into professional kitchens.

Why This Matters

Many industrial kitchens already have:

Solutions that integrate into these systems are often easier to adopt than solutions requiring a complete operational change.

CleanWater Environmental Observation

Every Application Story is part of a growing knowledge library.

Our objective is not simply to show where a machine is installed.

We want to understand how real industrial kitchens use ozonated water, what challenges they face, what works in practice, and how each application can help improve hygiene in food processing environments.

Because every installation teaches us something new.

And every lesson helps build better solutions for the next customer.
